Sauteed Plantains and Sweet Potatoes

Ingredients:

   2      tablespoons   butter or margarine
   2      tablespoons   cooking oil
   2      cups          sliced cooked sweet potatoes or yam -- s
   2                    plantains -- peeled & chopped
     1/2  cup           green onion -- chopped
     1/2  cup           cooked ham -- (opt), chopped
   1                    garlic cloves -- minced
     1/2  cup           chicken or beef broth
   2      tablespoons   butter or margarine
   2      tablespoons   chopped fresh thyme -- dill, chervil,, or
                        -- savory
   1                    salt -- to taste
   1                    pepper -- to taste
 

Preparation:

In a large skillet, melt the first 2 tablespoons of butter and cooking oil until hot. Add potatoes, plantains, onion, ham, if desired, and garlic. Cook stirring frequently, about 5 minutes. Add broth. Cover and simmer 10 minutes or until plantains are tender. Add remaining butter and desired fresh herbs. Season, to taste, with salt and pepper.
