Almond Gelatin

Ingredients:

  2           packages  unflavored gelatin
  1                cup  and 3 tablespoons cold water
  1                cup  1% milk
     1/3           cup  sugar
  2          teaspoons  almond extract
  8                     strawberries -- halved
  1                can  mandarin oranges -- (canned fruit with
                        -- juices usually
                        -- used, no fresh)
 

Preparation:

Sprinkle gelatin into 3 tablespoons cold water to soften. Bring 1 cup water to a boil, add the gelatin, and stir well till dissolved. Add milk, sugar and almond extract. Pour into 8" square pan which has been sprayed with a non-stick spray (such as Pam) Dice the almond gelatin into diamond shapes, serve in small bowls, approximately 8 diamonds per bowl, and add the fruit, allowing 1-2 lychee, 2 strawberry halves, and a few mandarin orange sections per serving. NOTE: Other fruits may be used.
