Lemon Chiffon

Ingredients:

  1            package  jello lemon flavor gelatin -- 3oz
  2        tablespoons  sugar
  1         tablespoon  lemon juice
  1           teaspoon  grated lemon rind
     3/4           cup  boiling water
  1 1/2           cups  crushed ice
  1 1/2           cups  thawed birds eye cool whip non dairy
                        whipped topping -- or
  1 1/2           cups  prepared dream whip whipped topping
 

Preparation:

Combine gelatin, sugar, lemon juice, lemon rind, and boiling water in electric blender container. Cover and blend at low speed until gelatin and sugar are dissolved, about 1 minute. Add ice and whipped topping; cover and blend at high speed until ice is melted, about 1 minute. Pour into serving bowl or individual dessert glasses. Chill until set, about 30 minutes. Garnish with additional prepared whipped topping and thin lemon slices, if desired. Makes 4 cups or 8 servings.
