Papaya Chutney

Ingredients:

  1       medium        Ripe papaya (about 1 pound)
   1/4    cup           White vinegar
   1/4    cup           Lemon juice
  1       Tablespoon    Chopped fresh cilantro 
  1       Tablespoon    Vegetable oil 
  5       drops         Honey-flavour 
  1       Tablespoon    sweetener for sugar
  2       Teaspoon      Grated gingerroot or
   3/4    Teaspoon      Ground ginger 
   1/4    Teaspoon      Chili powder 
   1/8    Teaspoon      Ground cinnamon
 

Preparation:

Pare papaya. Cut papaya in half and scoop out centers. Chop papaya finely. Heat all ingredients to boiling in 10-inch skillet; reduce heat. Cover and simmer 40 minutes, stirring occasionally. Serve warm or cold.
