Tofu Varuval

Serves: 4
A spicy and dried fried tofu
 

Ingredients:

1 big onion (cubed)
6 cloves garlic (finely chopped)
1cm ginger (finely chopped)
1 red chilly (chopped)
1 green chilly (chopped)
2 tbs corn
2 tbs green peas
2 tbs cubed carrots
2 tbs cubed tomatoes
4 tofu ( mashed)
1 egg (beaten)
curry leaves 
cumin seeds
1 tbs chilly powder
1 tsp turmeric powder
salt to taste
2 tbs oil
 

Preparation:

1. Heat oil in a wok. 2. Add cumin seeds till it splutter. 3. Add onion, garlic, ginger, red chilly and green chilly. Fry till colour changes. 4. Add green peas,corn, cubed carrots and tomatoes. Saute for 2 minutes. Add chilly powder and tumeric powder. Stir well. 5. Add mashed tofu and stir well. 6. Add salt to taste. 7. Finally add beaten egg and fry till egg get cooked. 8. Serve in a plate. 9. Can garnish with coriander leaves, mint leaves or cucumber as you wish.
