Preparation:
Liberally sprinkle cornmeal on the peel. Hand stretch the dough on a floured surface until it is approximately 14" in diameter (unless, of course, you're making a 10" pizza). Transfer it to the peel (with the cornmeal coating).
Apply a thin coating of olive oil, fully covering the surface of the dough. Spread the tomato sauce over the dough, leaving about a half inch margin around the edge. Once you've put the sauce on the pizza, work quickly to apply the rest of the ingredients. Spread about a cup of the cheese, add the canadian bacon and the rest of the toppings as desired, then spread the remaining cheese over the top. The reason for putting the toppings, especially the meat slices, in between the layers of cheese is to keep it from curling up as it cooks. Finally, season as desi |
