White Spinach Pizza With Ricotta

  1              Pound  fresh spinach -- washed well
  1         Tablespoon  minced garlic or to taste
  1         Tablespoon  olive oil
  1            Package  ready-made pizza dough
  1 1/2           Cups  grated mozzarella
     1/2           Cup  ricotta
  1                Cup  Pizza Sauce
                        Pizza Sauce:
     1/2           Cup  olive oil
     1/4           Cup  minced garlic
  1          Large Can  whole plum tomatoes in juice
     1/4           Cup  minced fresh basil
     1/4           Cup  minced fresh oregano
  1         Tablespoon  salt
     1/4           Cup  minced fresh parsley
     1/2      Teaspoon  pepper
 

Preparation:

Preheat the oven to 500°F. In a saucepan cook spinach and garlic in oil over moderate heat until wilted. Spread dough in oiled pizza pan sprinkled with cornmeal. Spread with sauce and sprinkle evenly with mozzarella. Bake on bottom shelf for 5 minutes. Sprinkle pizza with ricotta and top with spinach mixture. Bake for 5 to 10 minutes or until crust is golden brown and cheese is bubbling. Pizza Sauce Combine and mix ingredients in a large mixing bowl.
