Pungent Pumpkin Tarts

Ingredients:

   1      cup           sugar
   2      tablespoons   all-purpose flour
     1/2  teaspoon      salt
   1      teaspoon      ginger
     1/2  teaspoon      ground cinnamon
     1/4  teaspoon      ground nutmeg
     1/8  teaspoon      cloves
   3                    eggs
   1 1/2  cups          cooked mashed pumpkin
   1      cup           milk
   6                    unbaked 5-inch tart shells
                        whipped cream -- (optional)
 

Preparation:

1. Combine sugar, flour, salt, ginger, cinnamon, nutmeg and cloves; beat in eggs. 2. Blend in pumpkin. Add milk; mix well. 3. Pour into tart shells; bake in preheated 400 oven 25 to 30 minutes, or until a knife inserted into center comes out clean. 4. Cool; top with whipped cream, if desired.
