Preparation:
In a medium bowl, combine ground rice and 1/4 cup cold water. Gradually stir in more water until mixture forms a smooth paste. Add sugar and spices and mix well.
In a large saucepan, bring 2 1/2 cups water to a boil over high heat. Add ground rice mixture gradually, stirring constantly to prevent lumps from forming. Continue to stir until mixture boils again.
Reduce heat to low. Cover and simmer, stirring occasionally to prevent mixture from sticking to bottom of pan, for about 10 minutes, or until pudding is thick enough to coat the back of a spoon.
Allow pudding to cool slightly before pouring into a glass serving bowl or individual bowls. Cool to room temperature and refrigerate.
Before serving, sprinkle pudding with chopped nuts and serve cold.
