Variation of a Traditional Southern Pound Cake with a Smooth Sweet/Moist Consistency
Modified mother-in-law\'s recipe to suit my personal taste preferences (Don\'t knock it, she did the same thing). |

Ingredients:
o 2 – Sticks salted butter (room temperature)
o ⅓ - Cup Crisco
o 3 – Cups granulated sugar
o 5 – Eggs (room temperature)
o 3 – Cups flour (all-purpose)
o ½ - Teaspoon baking powder
o 1 – Cup milk (you can add a little cream)
o 1 – Teaspoon vanilla extract
o 1⅛ – Teaspoon almond extract

Preparation:
o Pre-heat oven to 350° F.
o Combine Flour and Baking Powder before sifting.
o Add flavoring to Milk.
o Grease Pound Cake form with Crisco.
o Cream Sugar, Butter and Crisco.
o Add one Egg at a time (beating well after each).
o Add Flour and Milk alternately.
o Mix until well blended.
o Pour batter into Pound Cake form (then spin form a couple times to make batter even).
o Bake at 350° for 58 minutes (you can turn the oven off near the end and let it coast).
o Place on cooling rack for 30 minutes before removing cake from form. |
