Apple Crunch Muffins

Ingredients:

 185      grams         unbleached flour -- sifted
   2      Teaspoon      baking powder
   1 1/2  Teaspoon      ground cinnamon

   1      cup           tart apples (Apples are to be washed and c
 100      grams         sugar
     1/2  Teaspoon      salt
     1/4  cup           vegetable shortening
 110      milliliter    milk
   1                    nut crunch topping
  50      grams         brown sugar (packed)
  25      grams         chopped pecans
     1/2  Teaspoon      ground cinnamon
 

Preparation:

1. Sift together flour, sugar, baking powder, salt and cinnamon into mixing bowl. 2. Cut in shortening with pastry blender until fine crumbs form. Combine egg and milk. Add to dry ingredients all at once, stirring just enough to moisten. Stir in apples. 3. Spoon batter into paper-lined 6 cm muffin-pan cups, filling 2/3 full. Sprinkle with nut crunch topping. 4. Bake in 190 øC oven 25 minutes or until golden brown. Serve hot with butter and homemade jelly or jam. .SH "NUT CRUNCH TOPPING" 1. Mix together all ingredients in a small bowl. Difficulty : easy.
