Preparation:
Soak raisins in 1/2 cup water, set aside (do not drain). Combine eggs,
pumpkin, sugar, spices, salt and oil, beat well. Stir in raisins and water,
set aside. Combine remaining ingredients in large mixing bowl; make a well
in center. Pour in pumpkin mixture, stirring just till moistened (batter
will be lumpy). Spoon batter into greased muffin pans, filling 2/3 full.
Bake at 400 degrees for 25 minutes. |
