Preparation:
Combine first 6 ingredients in a large bowl; make a well in center of
mixture. Stir together sweet potatoes and next 4 ingredients; add to dry
ingredients, stirring just until moistened. Stir in pecans and currants.
Spoon into greased muffin pans, filling three-fourths full. Bake at 375
degrees for 15 minutes. Remove from pans immediately. Serve warm. *1 1/2 cups canned mashed sweet potatoes may be substituted. |
