Preparation:
Preheat oven to 375. Prepare 36 mini-muffin pans with cooking spray and flour; set aside. In a mixing bowl, combine margarine, egg, and vanilla extract. In another mixing bowl, combine flour, sugar, baking powder, baking soda, oats, and nuts. Pour mixture into prepared mini-muffin tins. Bake for 15 to 20 minutes. While hot, tap muffin tin to get muffins out of pan. |
