Preparation:
1. Combine milk and coconut in small saucepan; simmer, stirring occasionally, for 2 minutes.
2. Remove from heat.
3. Beat eggs in large bowl; stir in coconut-milk mixture and remaining ingredients.
4. Turn into a greased 1-quart casserole; place in pan of hot water.
5. Bake in preheated 350 F. oven 30 minutes, until pudding is set and top is slightly brown. Serve warm. |
