Persimmon Pudding

Ingredients:

   2      cups          persimmon pulp -- (about 4

   2      cups          sugar
   2                    eggs
   1      teaspoon      baking soda
   1      cup           buttermilk
     1/2  stick         margarine
   1 3/4  cups          all-purpose flour
   1      teaspoon      baking powder
   1      cup           milk
 

Preparation:

1. In bowl, mix persimmon pulp and sugar; add eggs. 2. Mix baking soda with buttermilk; add to mixture in bowl. 3. Melt margarine in baking pan; add to mixture. 4. Sift flour and baking powder together; add alternately with milk to persimmon mixture, beating until smooth. 5. Pour into a 13 x 9-inch metal pan; bake in preheated 350 F. oven about 55 minutes. (Be careful not to overbake.)
