Potato Pudding

Ingredients:

  1              Pound  russet potatoes -- grated
     1/4           Cup  chopped onion
  2        Tablespoons  flour
  2        Tablespoons  butter
  2                     beaten eggs
  1                Cup  milk
  1           Teaspoon  salt
     1/4      Teaspoon  pepper
 

Preparation:

Peel potatoes and grate. Mix with onion and flour. Melt butter in a shallow 1quart baking dish. Spoon potato mixture into baking dish. Combine beaten eggs, milk and seasonings. Pour over potatoes. Bake in a 375 degree oven for 45 minutes. Cut in wedges to serve. Makes 4 to 6 servings.... Now this really does look like a good one to me you guys...what do you think? Betty
