Preparation:
Place pumpkin and butter in saucwepan and cook gently until pumpkin is dry. Cool and add salt and pepper.
Melt 1/4 cup butter, blend in flour, cook 1 minute, add milk, stirring thoroughly and cook until thick.
Add sauce to pumplin and mix well. Add egg yolks, one at a time, mixing well after each addition. Add cheese. Place mixture in greased mold. Place mold over pan of boiling water and cook 45 minutes or until pudding is firm. Turn over onto serving dish.
