Blue Cheese Venison Backstrap Steaks

Ingredients:

  1          container  crumbled blue cheese    (4-ounce)
  1            package  cream cheese    (3-ounce) softened
     1/2           cup  plain yogurt
  2          teaspoons  minced onion
     1/8      teaspoon  white pepper
  3                     venison tenderloins     (8-ounce)
  1             medium  garlic clove    pressed
  2          teaspoons  olive oil
     1/2      teaspoon  salt    divided
  2          teaspoons  dried parsley flakes (optional)
 

Preparation:

Stir together first 5 ingredients; set aside. Cut tenderloins in half crosswise; rub with garlic and brush with oil. Placeon rack in a broiler pan. Broil tenderloins 3 inches from heat (with electric oven door partially open) 7 minutes. Sprinkle with 1/4 teaspoon salt, and turn. Broil 7 more minutes; sprinkle with remaining 1/4 teaspoon salt, and top evenly with cheese mixture. Broil 5 more minutes or to desired degree of doneness. Sprinkle with parsley.
