Rabbit With Prunes

Ingredients:

  1         tablespoon  olive or vegetable oil
  1 1/2         pounds  rabbit -- cut into quarters
  1                cup  chopped onion
  1                cup  finely chopped carrot
  2             cloves  garlic -- minced
  1         tablespoon  all-purpose flour
     1/4      teaspoon  dried thyme
     1/4      teaspoon  dried marjoram
  2               cups  dry red wine -- or chicken stock or
                        -- broth
  2               cups  pitted prunes
  1         tablespoon  tomato paste
                        salt and pepper -- to taste
 

Preparation:

Heat oil in 6-quart pressure cooker. Brown rabbit on all sides. Remove rabbit and reserve. Add onion, carrot, and garlic to pressure cooker. Saute until tender. Stir in flour, thyme, and marjoram. Saute 1 minute. Stir in wine, prunes, and tomato paste. Return rabbit to pressure cooker. Close cover securely. Bring pressure up to 15 pounds and cook 6 minutes at that pressure.. Let pressure drop of its own accord. Season to taste.
