Ingredients:

  3              large  avocado -- chopped
  1             medium  yellow onion -- chopped
  1             medium  tomato -- chopped
  2       small   cans  green chile -- chopped
  1         tablespoon  olive oil
  1           teaspoon  hot pepper vinegar -- add more if needed
  2          teaspoons  salt
 

Preparation:

Mix all ingredients except half of the avocados until creamy. Add the remaining avocados and chill. Will keep refrigerated for 5 days.
