Skinny Guacamole

Ingredients:

   1                    avocado -- halved and pitted
   1      tablespoon    fresh lime juice
   1                    tomato -- peeled and seeded
                        -- chopped
   2      tablespoons   chopped red onion
   2      tablespoons   chopped fresh cilantro -- fresh coriander
   1                    jalapeno -- seeded and minced
     1/2  cup           yogurt cheese
     1/4  tablespoon    salt -- optional
                        freshly ground pepper -- to taste
 

Preparation:

Using a spoon, scoop avocado pulp into a bowl. Add lime juice. With a fork, coarsely mash avocado. Stir in tomato, onion, cilantro, jalapeno, and yogurt cheese. Season with salt and pepper. Serve within an hour at room temperature. (Makes about 2 cups (47 2 ml)) Per 2 tablespoon (30 ml) serving:
