Mediterranean Pita Sandwiches

Ingredients:

     1/4           cup  red wine vinegar
  3        tablespoons  Watkins Garlic Parsley Grapeseed Oil
  4          teaspoons  Watkins Italian Salad Dressing Blend
     1/2           cup  crumbled feta cheese
  1                can  sliced ripe olives -- 2 1/4oz
  1                can  white chunk chicken -- 10oz, drained and
                        flaked
  6               cups  torn fresh spinach
  4                     whole wheat pita bread -- halved
  1                cup  sliced seeded Roma (plum) tomatoes
     1/2           cup  red onion slices
 

Preparation:

Combine vinegar, oil and Dressing Blend in large bowl; mix well. Add feta cheese, olives and chicken; toss lightly. Add spinach; toss lightly. Divide mixture evenly inot pita bread; top with tomatioes and sliced onions. Makes 8 servings.
