Preparation:
Prepare barbecue (medium heat). Mix oil, brown sugar and cinnamon in small bowl to blend. Brush over cut side of peaches. Grill peaches, cut side down, until golden, about 3 to 5 minutes. Transfer peaches to cutting board and cut into thick wedges. Arrange in glass serving dishes. Top with ice cream. Garnish with mint, if desired.

This recipe also works well with nectarines. For a lower fat version, replace the ice cream with low-fat yogurt, or just omit it altogether. |
