Peach-Coconut Ice Cream

Ingredients:

  1                can  cream of coconut -- (15 oz.)
  4               cups  very ripe peaches -- peeled and sliced
     1/4           cup  fresh lemon juice
  1                cup  water
 

Preparation:

1. With a potato masher or fork, crush peaches with lemon juice in large bowl. Blend cream of coconut and water in blender until smooth; stir into peach mixture. Refrigerate 2 hours until cold. 2. Freeze in ice-cream maker according to manufacturer's instruction
