Green Beans Vinaigrette

Ingredients:

   1      pound         green beans -- trimmed
   1      tablespoon    dijon mustard
   2      tablespoons   lemon juice
   1      tablespoon    balsamic vinegar
   3      tablespoons   olive oil
                        salt and pepper
 

Preparation:

Drop the beans into a saucepan of rapidly boiling water, simmer the beans for 5 minutes or until they are tender crisp. Drain and rinse immediately with cold water to stop cooking; drain well. In a large bowl, whisk together the lemon juice , olive oil, balsamic vinegar, and salt and pepper to taste. Add green beans and toss to coat. Place in refrigerator and let marinate at least 1/2 hour before serving.
