Mini Burgers

Ingredients:

  1                 Lb  minced beef
  3               Tbsp  sun-dried tomato paste
  2                     shallots -- finely chopped
  2             Cloves  garlic -- finely chopped
                        salt and freshly ground black pepper
  6                     mini bread rolls -- sliced in three
                        horizontally
  2               Tbsp  olive oil
  3                     quail eggs -- hard boiled and
                        halved
  3                 Oz  smoked mozzarella -- cut into diamonds
  3                     pickled gherkins -- halved
  3                     radishes -- halved
                        For the dip:
     1/4            Pint  natural yogurt
  2                     fl.oz sour cream
  2               Tbsp  chopped mixed herbs
                        salt and freshly ground black pepper
                        few rocket leaves to garnish -- if wished
 

Preparation:

Mix the minced beef, tomato paste, shallots and garlic. Season with salt and peper and divide into 18. Shape into mini burgers. Chill until required. Preheat the grill to high. Grill the burgers for about 4-5 mins. on each side. Drizzle the sliced rolls with oil and grill for 1-2 mins on each side, or until crisp. Arrange the halved rolls on serving plates and put a burger on each. Put half a quail egg on top of six burgers and skewer with a cocktail stick. Do the same on another six with a diamond of mozzarella. And repeat with a gherkin and radish half for the remaining six. Mix together ingredients for the dip and serve with burgers. Garnish the burgers with a little rocket if wished.
