Preparation:
In a medium bowl stir together the strawberries, kiwi fruit, green onion, sweet pepper, lime or lemon juice, cilantro, parsley, or basil; sugar; and red pepper. Cover and chill salsa for up to 6 hours. Makes about 1 1/4 cups.
Variations:
Peach and Kiwi Salsa: Prepare salsa as directed except substitute 1/2 cup chopped peach or nectarine for the chopped strawberries and 1/4 cup chopped red onion for the green onion. Makes 1 1/4 cups.
Orange-Avocado Salsa: Prepare salsa as directed above except substitute one 8-ounce can mandarin orange sections, drained, for the strawberries, 1 small avocado, halved, seeded and peeled, for the kiwi fruit; and orange juice for the lime or lemon juice. Add 1/4 cup toasted slivered almonds before serving. Makes about 2 cups. |
