Ingredients:

                        onion -- chopped
  2             medium  tomatoes -- peeled, seeded and
                        coarsely chopped
  2             medium  to large peaches -- nectarines or
                        mangoes -- peeled and diced
  2        tablespoons  chopped fresh mint or cilantro or basil
  2             cloves  garlic -- minced
  2                     jalapeno peppers -- seeded and minced
  2          teaspoons  grated lime peel -- (2 to 3)
  2        tablespoons  lime juice
  1         tablespoon  balsamic vinegar -- optional
                        salt and pepper to taste
 

Preparation:

Combine all ingredients and chill several hours to blend flavors.
