Ingredients:

1         package       jello peach flavor gelatin -- 3oz
3/4       cup           boiling water
1         teaspoon      lemon juice
1         package       birds eye quick thaw strawberries -- 10oz, partly thawed

Preparation:

Combine gelatin, boiling water, and lemon juice in electric blender container. Cover and blend at low speed until gelatin is dissolved, about 1 minute. Break strawberries apart and add to blender. Cover and blend at high speed for about 1 minute. Pour into individual glasses and chill until set, about 30 minutes. Garnish with mint sprigs or fresh strawberries, if desired.
