MINT and CARAMELIZED SHALLOT SALSA

Ingredients:

  10                    shallots        peeled & thinly
                        sliced
  1              Tbsp.  fresh ginger    grated
     1/4            c.  fresh mint      minced
                        « c. fresh pineapple    diced fine
  2              Tbsp.  pineapple juice
  1               tsp.  minced Thai red chiles (seeded) or
  1                     « tsp. minced red serranos
     3/4          tsp.  sugar
  1               Tsp.  soy sauce
  2              Tbsp.  unseasoned rice vinegar
 

Preparation:

Saute shallots in water until browned, about 10 minutes. Cool. Mix with remaining ingredients. Chill in refrigerator several hours to mix flavors. Serves 6.
