Ingredients:

1 1/2 papayas -- peeled, seeded, cut

1/2 red bell pepper -- seeded and diced
3 tablespoons fresh lime juice
1 tablespoon olive oil
2 tablespoons mint -- finely chopped

Preparation:
Combine all the ingredients, mix thoroughly, and set aside in the refrigerator for at least 2 hours for the flavors to combine. Use within 24 hours. Makes 3 cups.
