Peach Pecan Salsa

Ingredients:

     1/2           cup  sugar
  1                cup  orange juice
  2        tablespoons  vinegar
  3        tablespoons  crushed dried red new mexican chilies -- including seeds
  1              stick  cinnamon -- 21/2-inch
     1/4      teaspoon  ground cumin -- (cominos)
  1         tablespoon  orange zest -- finely grated
  3              large  peaches -- peeled and chopped
     1/2           cup  toasted pecans -- chopped
 

Preparation:

Dissolve sugar in orange juice and vinegar. Add chilies, cinnamon, cumin and zest. Bring to a boil, reduce heat and simmer 20 minutes until it becomes a thick syrup. Discard cinnamon and add peaches; simmer 5 minutes. Stir in pecans and heat 1 more minute before serving.
