Peach Salsa

Ingredients:

  2              large  ripe peaches -- peeled and pitted
  1         tablespoon  fresh lemon or lime juice
  2             medium  tomatoes -- peeled and seeded
  6              large  green onion -- chopped
  1         tablespoon  bottled jalapeno pepper -- chopped
  1         tablespoon  cilantro -- minced, optional
  12       tablespoons  good olive oil
  4        tablespoons  sherry vinegar
  2          teaspoons  honey
 

Preparation:

Cut the peaches into medium dice and toss with lemon juice. Cut the tomatoes into medium julienne strips. Combine peaches and tomatoes. Add green onions, jalapeno pepper, and cilantro. Mix. Whisk together oil, vinegar and honey and pour over the other ingredients. You may leave this unrefrigerated if you are using it within several hours; otherwise cover it and refrigerate. Makes approximately 3 cups.
