Ingredients:

  8                     tomatillos -- finely diced
  1              small  red bell pepper -- finely diced
  1              small  yellow bell pepper -- finely diced
  1              small  poblano pepper -- seeded and diced
  1                     jalapeno or serrano chile -- finely chopped
  2        tablespoons  fresh lime juice
  1               dash  white wine vinegar
  1              clove  garlic -- minced
                        salt and pepper -- to taste
  1              pinch  sugar
 

Preparation:

Combine all the ingredients, mix thoroughly, and set aside in the refrigerator for at least 2 hours for the flavors to combine. Use within 2 days. Makes 2 cups. Notes: Tangy green tomatillos and the colors from the other ingredients in this salsa add a vibrant splash of color to simple preparations of fish and chicken. This salsa really dresses up salmon cakes.
