Stuffed Potato Skins

Ingredients:

1/2       pound         ground beef -- cooked, drained
3/4       cup           shredded monterey jack cheese -- divided
1/2       cup           prepared best foods house dressing salad dressing
1/4       cup           sliced ripe olives
1         tablespoon    chopped green chilies -- drained
16                      cooked potato skin quarters
 

Preparation:

In medium bowl stir together beef, 1/2 cup of the cheese and next 3 ingredients until blended. Spoon about 2 tablespoons filling onto each potato skin. Sprinkle potato skins with remaining 1/4 cup cheese. Broil 6 inches from source of heat 3 to 5 minutes or until hot and cheese is melted.
