Ingredients:


---CRUST---

1 cup jiffy baking mix

1/2 cup soft butter

1/4 cup powdered sugar

---FILLING---

2 large eggs -- beaten

1 cup sugar

2 tablespoons jiffy baking mix

3 tablespoons lemon juice

1/4 teaspoon lemon rind

1 tablespoon powdered sugar -- to dust top
 

Preparation / Directions:


Preheat oven to 350 degrees. Mix together 1 cup baking mix, 1/4 cup powdered sugar and soft butter until crumbly. Press into bottom of 9 x 9 inch pan. Bake for 20 minutes. With electric mixer, beat eggs on high until foamy. Add sugar, 2 tablespoons baking mix, lemon juice and rind. Beat 1 minute. Remove baked crust from oven and pour lemon mixture over crust. Bake for about 25 minutes. Remove from oven, cool, dust with 1 tablespoon powdered sugar and cut in bars.
