Meatloaf 'N Taters

Ingredients:


6 ounces cornbread stuffing mix

2 Pounds ground beef

2 Large eggs -- lightly beaten

1 Cup water

1 package dry onion soup mix -- (1.3-ounce)

6 Small baking potatoes -- peeled and halved

2 Tablespoons vegetable oil

1/2 Teaspoon salt

1/2 Cup ketchup Remove flavor packet from -- set mix aside.

1 package stuffing mix
 

Preparation / Directions:


Combine flavor packet, ground beef, and next 3 ingredients. Stir in stuffing mix; shape into a 10- x 6-inch loaf. Place loaf on a lightly greased rack in a broiler pan. Toss together potatoes, oil and salt; arrange around loaf. Bake at 400° for 45 minutes. Remove from oven, and spread with ketchup. Bake 15 more minutes or until done.
