Quick Skillet Supper

Ingredients:


1/2 pound beef sirloin steak

1 tablespoon vegetable oil

2 cups sliced mushrooms

17 ounces corn -- drained

1 can stewed tomatoes -- undrained

1 clove garlic

1 teaspoon dried oregano

1/8 teaspoon black pepper

3 cups rice -- cooked
 

Preparation / Directions:


Partially freeze steak; slice across the grain into 1/8 inch strips. Heat oil in large skillet over medium-high heat until hot. Brown meat quickly in oil, about 2 minutes; remove. Add vegetables, garlic, oregano, and pepper; stir. Reduce heat to medium; cover and cook 4 to 6 minutes. Add meat and cook until heated. Serve over rice.
