Texas Beef Brisket

Ingredients:


5 pound fresh beef brisket (not corned beef)

1 teaspoon kosher or regular salt

1 dash Pepper

2 tablespoons liquid mesquite smoke flavoring

1 small onion chopped (1/4 cup)

2 teaspoons garlic finely chopped

1/4 cup water

1/4 cup lime juice
 

Preparation / Directions:


1. Heat oven to 325 degrees. Trim some of the fat from the beef. Rub surface of beef with salt, pepper and liquid smoke, then with onion and garlic. 2. Place beef, fat side up, in shallow roasting pan. Mix water and lime juice; pour over beef. 3. Cover and bake 4 to 5 hours or until beef is very tender. Drain. Shred beef, using 2 forks. Cover and refrigerate up to 4 days or freeze up to 2 months.
