Preparation / Directions:
Apple Filling:
3 Tbs Raisins
2 Med Apples –Peeled and Chopped—
2 Tbs Sugar
1 Tbs Cinnamon
1 Tbs Apple pie Spice or Cinnamon

2 tsp poppy seeds
1/4 cup Vegetable oil
Place all the dough ingredients in the ABM and press start. When the timer
reaches 2:40 take the dough out of the pan, Make sure you DO NOT remove the
pan as the timer will recycle. Remove the dough to a lightly floured
board. Remove the kneading blade from the pan. (be careful as at 2:30 it
will start up to take the gas out of the dough). Use a pair of scissors or
a sharp knife to divide the dough into 12 equal pieces. (cut the dough
into 3 equal pieces and then cut them into 4's) Form each into a ball and
then with the palm of your hand flatten into circle. Place 1 Tbs of the
apple filling intothe center of each ball and bring the edges of hte dough
up and around to enclose the filling. Dip each ball into the oil, then
into the poppy seeds.
Place the balls back into the ABM in two layers.
The directions are for the Hitachi ABM but should work on other models.
Dede's Buttermilk Bread
1-1/2# DOUGH or (1# DOUGH)
1-1/8 Cups BUTTERMILK (7/8 C.)
3 Tablespoons HONEY (2)
1-1/2 teaspoons SALT (1 tsp)
1 Tablespoon BUTTER (1 T)
3 cups BREAD FLOUR (2)
1/4 teaspoons BAKING SODA (1/4 t) not needed with DRY buttermilk powder
1-1/2 teaspoons Red Star YEAST (1-1/2 tsp.)
Place all ingredients in bread pan, select LIGHT crust press Start

Egg Bread
1-1/2# DOUGH or (1# DOUGH)
3/4 C. MILK (1/2 C.)
2 EGGS (1 egg)

Light Whole Wheat Bread
Small Loaf (1 pound) Ingredients Large Loaf (1-1/2 pounds)

1-1/2 tsp. active dry yeast 2-1/4 tsp.
1 cup + 2 Tbsp. bread flour 1-2/3 cups
1 cup whole wheat flour 1-1/2 cups
1 tsp. salt 1-1/2 tsp.
1 Tbsp. vegetable oil 1-1/2 Tbsp.
2 Tbsp. honey 3 Tbsp.
3/4 cup + 1 Tbsp. water 1-1/4 cups
Add all ingredients in the order suggested in your bread machine
manual and process on the basic bread cycle according to the
manufacturer's directions.
Canadian Bagels
4-5 cups sifted flour,
1 tblsn yeast
2 tspn salt
1.5 cups hot tap water
1 egg white
3 tblsns cold water
poppy or sesame seeds
Combine 4 cups of flour with yeast and salt. Mix until yeast is uniform
throughout. Add 1.5 cups of hot water and need the dough for 5 minutes
using the remaining 1 cup of flour (if necessary). Make into a large ball
and let rise for 10 min. Separate the dough into 8 pieces and poke a small
hole and begin to shape into a bagel. Let the bagels rise for 20 min.
Fill a skillet with 1.5 to 2" of water and let the bagels simmer in the
water for 7 min (you can also use a dutch oven for this). Transfer to a
cookie sheet. Combine egg white and cold water and brush on bagels.
Sprinkle poppy or sesame seeds. Bake in a preheated oven for 30 min at
375º.
I haven't tried this yet but you can add raisins (1 cup should do) at the
start of
