Preparation / Directions:Preheat oven to 375 degrees. Grease and flour a 7 1/2 x 3 1/2 x 2 inch loaf pan. Mix muffin mix, egg, milk and apricots until well blended. Pour into prepared pan. Sprinkle with cinnamon and brown sugar mixture. Swirl through batter with a fork. Bake about 25 minutes or until toothpick comes out clean. Remove from pan. Cool completely and slice. Make 1 loaf.
