Ingredients:


1 tablespoon green cardamom pods -- remove seeds

1 piece cinnamon stick -- crushed to small pieces

1 teaspoon whole cloves

1 1/2 tablespoons black peppercorns

1/4 cup cumin seeds

1/4 cup coriander seeds
 

Preparation / Directions:


Combine all the spices and roast them in a prewarmed heavy skillet on top of the stove, for a couple of minutes, stirring and shaking the pan constantly to keep them from burning.Cool,then grind them in a coffee grinder or spice mill. Store airtight in a cool dry place. ** Ask about 1/4 what of coriander seeds.
