Chocolate Almond Zucchini Bread

Preparation / Directions:


Beat 3 eggs until lemon color. Beat in 2 cups sugar, 1 cup salad oil. Melt 2 ounces unsweetened chocolate over hot water and stir into egg mixture along with 1 teaspoon vanilla and 2 cups grated small zucchini. Sift 3 cups flour with 1 tsp. salt, 1 tsp, cinnamon, 1/4 tsp. baking powder and 1 tsp. baking soda. Stir zucchini mixture with 1 cup coarsely chopped almonds; mix well. Bake in two well oiled loaf pans at 350 degrees for 1 hour and 20 minutes or until done. Cool in pans 15 minutes to 20 minutes; turn onto rack. Cool throroughly and serve spread with whipped cream cheese flavored with grated orange rind.
