Health Food Zucchini Bread

Ingredients:


3 large eggs

2 cups sugar or honey

2 cups zucchini -- grated

1 teaspoon salt

1/2 teaspoon baking powder

2 teaspoons nutmeg

1/2 cup raisins

1 cup oil -- (sunflower)

2 teaspoons vanilla

3 cups flour -- (1/2 soy and 1/2 whole wheat)

1 teaspoon baking soda

3 teaspoons cinnamon

1/2 cup chopped nuts

1/2 cup chopped dates
 

Preparation / Directions:


Beat eggs; add oil, sugar, vinegar, zucchini and vanilla. Mix well, but lightly. Add flour and dry ingredients. Mix to blend. Add nuts, raisins, and anything you can think of to make it taste good. Mis. Bake in 2 greased bread pans for 1 hour at 325 degrees.
