Preparation / Directions:
Makes one 9 x 5-inch loaf
1. Mix flour with sugar, baking powder and salt; stir in coconut and orange rind.
2. Combine egg, milk and vanilla; stir into flour mixture. Do not beat.
3. Pour into greased 9 x 5-inch loaf pan; bake in preheated 350 F. oven 1 hour and 10 minutes, or until cake tester inserted in center comes out clean.
4. Cool in pan 10 minutes; remove from pan and finish cooling on rack.
5. Cut into thin slices; toast, if desired.
NOTE: For easier slicing, store overnight, wrapped in waxed paper, plastic wrap or aluminum foil.
