Sunny Corn Bread

Ingredients:


1 cup cornmeal

1 cup all-purpose flour

1/2 cup sugar

4 teaspoons baking powder

1 large egg

1/2 teaspoon vanilla

1 cup milk

1/4 cup vegetable oil
 

Preparation / Directions:


Mix dry ingredients together. Add egg, vanilla, milk and oil. Beat just until smooth, approximately 1 minute (don't over mix). Pour batter into a greased 8-inch square pan or greased muffin tin. Bake at 350 degrees for approximately 20 to 25 minutes. Serve warm with butter or covered with creamed chicken, fish or meat.
