Broccoli Soup

Ingredients:


2 tablespoons vegetable oil

1 large onion

2 cloves garlic

1 head broccoli

6 cups chicken broth

1 teaspoon salt and black pepper

1/2 cup heavy cream

1/8 teaspoon paprika

1/2 cup grated parmesan cheese
 

Preparation / Directions:


In large saucepan, heat vegetable oil and cook onion until softened. Add garlic, broccoli and broth. Stir well. Simmer, uncovered, until broccoli is tender. Puree with blender until smooth. Return to saucepan and add cream, salt and pepper and paprika. Mix together. Serve with grated parmesan cheese. Approximately 6-8 minutes.
