Preparation / Directions:
Drain pineapple and save juice. In a bowl, combine the pineapple, beef,
eggs, garlic, cheese, onion, bread crumbs and red peppers. Mix well and
shape meat into 1 large hamburger shaped patty, 1 1/2 inches thick. Place
on a broiler rack. Preheat broiler. In a saucepan, combine saved
pineapple juice with the can of pineapple juice, marmalade, honey,
cornstarch and worcestershire. Stir until cornstarch is dissolved. Cook
over medium heat, stirring, until sauce boils and thickens. Brush sauce
over top of meat. Broil meat 4 inches from the heat source for 10
minutes. Baste again with the sauce and broil 10 more minutes. With 2
large spatulas, move the meat patty to a plate. Place another plate on
top. Invert the patty and slide back onto the broiler rack. Baste patty
with sauce. Broil 10 minutes or until done to taste. Place meat patty on
the bottom half of the bread. Add garnishes of your choice (tomatoes,
onions, sauces, etc..) and top with other bread half. Cut into pie shaped
wedges. Serve while hot.
