Spicy Red Cabbage

Ingredients:


5 1/2 pounds red cabbage

1/2 pound onion -- chopped

1 medium tart apple -- peeled and chopped

1 cup prunes -- pitted

1 clove garlic -- crushed

1 teaspoon cinnamon -- ground

1/4 teaspoon cloves -- ground

1 teaspoon cumin -- ground

1 teaspoon coriander -- ground

2 tablespoons red wine vinegar

1/2 teaspoon nutmeg to taste
 

Preparation / Directions:


Quarter, core and shred the cabbage. Place into a large pot. Add the onion, apple, prunes, garlic and spices. Mix thoroughly. Add 1/2 cup water and cover with a lid. Cook over medium heat for 2 hours. Stir frequently. Add water if needed.
